Well lets get into topic. The scientific name of olive is Olea europaea, whose meaning is European oil

Well the olives comes from olive tree which comes under the family of Oleaceae

INTRODUCTION ABOUT OLIVES:

Olive tree is an ancient tree whose origins is found to be 20-40 million years old in the eastern Mediterranean basin

 Olives are found and cultivated in Mediterranean Basin mainly in South America, South Africa, Australia, New Zealand and United states

The word olive derived from the Latin word oliva, well the olive tree is an ever green tree short tree whose height is 8-15 m

The olive fruit possibly 1-2.5 cm long when it’s ripe

TYPES OF OLIVES:

Olives are often classified into 3 types

  1. Green olives
  2. Semi ripe olives  (which are also probably green)
  3. Ripe olives or black olives

GREEN OLIVE FRUITS:

  1. The green olive fruits are generally unripe fruits
  2. These were picked when the fruit obtain its full size
  3. Usually the color of these green ripe fruits are green to yellow
  4. And these are bitter in taste

SEMI RIPE OLIVES:

  1. These are semi ripped fruits as mention in the heading and have colors like green to red
  2. These olives are picked at the beginning of the ripening process
  3. These are also found in bitter taste

BLACK OLIVES:

  1. These olives are the fully ripped olives
  2. These olives are found in black to brown  color

The type of fruits the we generally eat are the semi ripe green colored fruit. As I mentioned these fruits are found in bitter taste, to get rid of that bitter taste these fruits under goes fermentation process

THE FERMENTATION AND CURING PROCESS:

As I first mentioned the actual taste of olives is bitter to get rid of bitterness fermentation is necessary and to store the fruit for the further uses the curing process is necessary
